I always have store bought bajra flour. Last time when my mom visited she told me that the flour was not so nice as it taste so old. And next time when I visited her she pre packed all millet flour. Mums are always best!. She is true. I could taste the difference of mill brought / made flour. It is fresh and has nice aroma. I love to make kanji and I can have this for breakfast or lunch (when I am home). It is really refreshing and quite filling.
Ingredients:
Bajra flour – 2 tablespoon
Water – 1 cup
Salt to taste
Onion / Shallots – 2 tablespoon
Coriander leaves – 1 tablespoon
Curry leaves – 10 (finely chopped)
Mustard seeds – 1/4 teaspoon
Urad dhal – 1/2 teaspoon
Mor millagai or green chilli – 1 to 2 (adjust to your spice level)
Butter milk – 1 cup or mix in 1/2 cup of yogurt and 1/2 cup water
Oil – 1 teaspoon
Method:
Add flour, salt to 1 cup of water and mix it without any lumps
Cook the flour. Switch it off. Add buttermilk and mix well
Heat the pan. Add oil and when it is hot add mustard seeds. Let it pop. Add urad dhal and fry till it is brown color. Add Curry leaves and onion and bit of salt. Fry till they are transparent. Switch it off. Add onion mixture, crushed mor millagai to kanji and mix well.
Enjoy it with pickle or mor millagai
