Banana Oat Meal Choco Chip Cake

It has been an a while since I have baked a cake. Today I had urge to bake. So far all my cakes were using all purpose flour. Today I wanted to try out with Wheat. I was searching on the net.. I came across this version which looked interesting. Original recipe calls for 2 cups unbleached flour. I have used 1 cup all purpose flour and 1 cup wheat flour. Pls. click here for original recipe. This is definitely healthier version than normal ones

 Ingredients

  • 1 cup all purpose flour
  • 1 cup wheat flour
  • 3/4 cup quick oats
  • 3 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/3 teaspoon salt
  • 1/2 cup packed brown sugar
  • 1/2 cup sugar ( I have used 1/4 cup only. Adjust the sugar based on sweetness of banana and your preference)
  • 3/4 cup sunflower oil
  • 1 1/2 cup pureed ripe bananas (I have used 3 bananas)
  • 1 1/2 tablespoons vanilla extract
  • 3/4 cup milk (I have used low fat. If you want to make it vegan then use almond milk)
  • 3/4 cup mini chocolate chips

Method

Preheat oven to 180 degrees.Grease and flour baking pan.
Sieve together all purpose flour, wheat flour, baking powder, baking soda and salt. Add oats and mix well

In a large bowl, whisk together brown sugar, sugar, oil, milk and vanilla extract until smooth. Add  pureed banana and mix well.Fold the flour mixture into the wet ingredients until mostly mixed.

Fold ingredients until incorporated and add the chocolate chocolate chips until just mixed. Do not over mix.

Pour the batter into the prepared pan.
Bake at 180 for approximately 25-35 minutes or till is done (when inserted toothpick at the center it should come out clean). Mine got done within 28 mins

If you prefer to have some topping go ahead to add and enjoy the cake
