Barley Salad

I like Chinese dessert with Barley which I get it at our canteen. Thinking of doing it I brought pearl barley quite sometime ago. But never get around it. The Barley was nearing expiry date. So I wanted to do something else with it. I was thinking about doing something like soup or salad. finally I settled in for salad  because it is easier to do and you can mix in whatever you like (nuts, fruits etc..). I have added those fruits and nuts that kids love so that they have urge to try.  It is good alternative to the normal salads. Kids enjoyed it




Ingredients

1/3cup(s) Almonds ( I have used baked whole almonds)
2 tablespoon olive oil ( I have used Basil dressing olive oil)
tablespoon(s) white vinegar
small Onion chopped finely

Salt per taste
Freshly ground pepper
2 Cups Cooked pearl barly
large apple, such as Honeycrisp, cored and cut into 1/2-inch pieces
1/2 cup(s) (from 1 pomegranate) pomegranate seeds
2 tablespoon chopped coriander leaves


Method
Soak Barley overnight and cook it well (in pressure cooker about 3 whistle)
Heat the kada and add oil. When it is hot add onion fry till it slight brown

Add Pepper, Salt, Vinegar. Fry for 40 sec

Add Cooked barley fry for 3 mins. Stir in regularly. Add Apple, Pomegranate and barley and mix well. Fry for another 1 min

Switch it off and garnish with coriander leaves
