I wanted something soupy for the lunch. Not in a mood to do so many dishes. So I was looking for soup which can be used as meal itself. I had some barley in the fridge. So I have decided to do simple barley soup. It tasted wonderful and quite filling
Ingredients:
Barley – 1/2 Cup
Spinach – 1 Cup (chopped finely. I have used baby spinach)
Peas – 1/4 cup
Cumin seeds – 1 teaspoon
Black Pepper powder – 1 teaspoon (adjust to ur spice level)
Onion – 1 finely chopped
Oil – 1 teaspoon
Mixed italian spice – 1/2 teaspoon
Roasted peanut – 1 teaspoon
Red chillie flakes – 1/2 teaspoon
Method:
Wash and soak barley for 3 hours. Cook the Barley with salt ( I have pressure cooked till 2 whistle). Keep it aside
Heat the kada. Add oil. When oil is hot add cumin seeds and let it crackle. Add Onion and fry till onion is slight brown color. Add peas and fry for another 2 mins. Add chopped spinach and fry for another 2 mins. Add cooked barley, water, pepper powder and mixed Italian spices. Check for salt and add more if required. Let it boil for another 3-5 mins.
Enjoy the hot soup. When serving garnish with peanut and red chilli flakes
