It has been a while since I made uttappam. Otherday I wanted to millet base dosa. While I about soak my son told me that it has been a while since I did uttappam. But he wanted some dishes with Paneer too. So I told him we can try paneer uttappam. He said why not? It came out pretty good. Our family really loved it.. this post goes to Shhhhh Cooking Secretly Challenge
Ingredients:
Uttappam batter
Barnyard millet – 2 cups
Idli rice – 2 cups
Urad dhal – 1/4 cup
Thuvar dal / Toor dal- 1/4 cup
Fenugreek seeds – 1/4 teaspoon
Salt to taste
Oil for cooking Uttappam
For Paneer
Grated paneer – 1.5 cup
Tri color bell pepper – 1 cup (chopped roughly)
Salt to taste
Roasted cumin seeds powder – 1 teaspoon
Red chilli powder – 1/2 teaspoon
Coriander leaves – 2 tablespoon
Ginger Juice – 1/2 teaspoon
Method:
Batter:
Wash and soak all the ingredients except salt for 5-7 hours or overnight
Drain the water and grind it smooth paste. Add salt and grind it for another 2 mins. Remove it and let it ferment it overnight or 6 hrs
Paneer
Now prepare Paneer, Heat the pan and paneer, ginger juice, Bell pepper and salt. Fry for 2 mins.
Add Cumin seeds powder, Red chilli powder and mix well. Add coriander leaves and mix well.
Uttappam:
Add paneer to Fermented batter. Mix well
Heat the flat pan. Take laddle full of batter and spread it like you see in the pic. Drizzle oil around it
Cook it at low medium flame for a min or 1.5 min. You will see small holes once it is cooked
Flip it over and cook. Cook for another 1 min (It should be brown in color). Remove it from Pan
Serve hot
