Beetroot Paratha

Beet is our kids favourite vegetable. I like the unique taste of it. It has good nutrients. Since it is favourite veg for the family I always have this in my fridge. I do all sort of dish out of it. I was told though beet root has various health benefits, it should be avoided by diabetic patients since it is high in sugar content. So Pls check with your doctor about it. I can have this with simple plain Yogurt.
Ingredients:

Wheat Flour – 4 Cups
Beetroot – 1 (Medium Size)
Fennel seeds – 3/4 Teaspoon
Sesame seeds – 1/2 Teaspoon
Finely chopped green chillies – 4 (Adjust it to your taste)
Finely chopped Coriander Leaves – 1 tablesppon
Salt as required

Method:

Grate the beetroot ( I use the smaller hole)
Dry roast Fennel seeds and Sesame seeds. Powder it in mixie
Make dough by mixing wheat flour, beetroot, green chilies, coriander leaves, Powdered fennel seeds and sesame seeds, salt and water. (Don not use more water because beetroot also contains water which will make the dough softer and paratha does not need soft dough)

Now keep the dough for 30 Min.

Now make balls from the dough, and make round shape dipping the ball once in dry wheat flour like we make roti

Cook both the sides with oil, It shouldn’t be so soft and not too crispy

Once paratha is cooked, Serve with Yogurt
