Kachori is a simple evening snack. I have posted a few kachori recipes. This besan is simpler than others and quick to make especially the stuffing. If you are looking for something which is not sweet or with vegetable, this is a perfect choice. The stuffing in the kachori has an all-in-one taste: the spice and tanginess. If you make your outer layer dough properly, kachori can stay crispy for a long time. Even though my sons enjoy any type of savory snack this one is one of their favourite. My friend makes the baked version but I the prefer deep fry version as it gives a nice crunchy outer layer
Ingredients:
For Outer layer:
All Purpose flour – 1 cup
Corn Flour – 1.5 tablespoon
Melted (at room temperature) Ghee – 2 tablespoon
Salt to taste
For Stuffing
Besan flour / Bengal gram dal flour – 1/4 cup
Oil – 2 tablespoon
Green chillies – 1
Hing / Asafoetida – Generous pinch
Coriander powder – 1/2 teaspoon
Chilli powder – 1/4 teaspoon
Gram Masala – 1/4 teaspoon
Roasted Cumin Powder – 1/2 teaspoon
Salt to taste
Lemon juice – 1 teaspoon
For Kachori
Oil for Deep frying
Method:
In a bowl take flour, corn flour, salt, and melted ghee. Make a crumble. Add water, and make a stiff dough. Cover it with a slightly wet cloth for 30 minutes to 1 hour.
Heat oil in a pan. Add green chilies and hing. Fry for 10 seconds. Add flour.
Add all masala powder except lemon juice. Fry until the nutty flavor released. Add lemon juice. Switch it off.
Divide the dough into equal lemon-size balls. Using fingers, spread it to make bowl shape.
Keep 3 teaspoon of stuffing. Bring the end together to make ball.
Flatten it with your palm. Repeat the process and make all the kachoris. Keep it aside.
Heat oil for deep fry. Once the oil is hot, drop the kachories and slowly cook it in medium flame till all sides are browned
Once done drain extra oil and remove it. Place it in kitchen tissue to drain any extra oil
Serve hot
