Oats cookies is something I wanted to try for long time. But all these years my family is not really eating oats cookies. So kind of keep postponing it. Lately I see quaker oats cookies in our weekly provision shopping. So decided to try out oats cookies at home. This is a very simple and tasty recipe. This cookie is so crisp outside chewy inside. Perfect for the holiday season.
Ingredients:
Rolled Oats – 1.5 cups
All purpose flour – 3/4 cup
Baking soda – 1/2 teaspoon
Baking powder – 1/2 teaspoon
Salt – 1/2 teaspoon
Unsalted Butter – 1/2 cup (113g. Soften to room temp)
Milk – 2 tablespoon
Vanilla extract – 1 teaspoon
Chocochips – 2 tablespoons
Peanut – 1/4 cup
brown sugar – 1 cup
Method:
Mix together All purpose flour, baking soda, baking powder, salt. keep it aside Cream together Butter, sugar, vanilla extract
Add Dry ingredients to creamed butter. Add oats chocochips, oats, peanut. Mix well.
If needed add Milk and mix well. Keep it in fridge for 60 mins. Pre heat oven at 180 degree C. Line the baking tray with baking sheet. Shape cookie dough into small balls
Place it in baking tray. Flatten it slightly. Bake it for 12-14 mins or till sides browned
remove it from baking tray and let it cool down

I too don't have much fans of oats here at home but this looks perfect to sneak in..yummy with chocolate chips !!
I do have some rolled oats in my pantry to be finished, and these cookies sound just great to be made with it… They look so addictive!
