During last school holiday, I wanted to make some evening snack for the kids. After tasting Roasted vegetable Puff cup my son was saying that curry would go better with pastry than simple roasted vegetable. I had some sweet potato so I decided to make the bite size curry puff. Generally my kids are not a big fans of sweet potato. So I seldom buy sweet potato. But in my last trip to my sis I made this sweet potato cutlet and kids loved it. So I have decided to try it as stuffing for puff. Kids really loved it.
Ingredients
Pastry Sheet – 2 (I have used store brought. Thaw per instructions)
For Masala:
Sweet potato – 250g – 300 g
Mixed vegetable – 1.5 cups (I have used Beans and carrot. Finely chopped)
Onion – 1.5 (I have used 1 red onion 1/2 white onion)
Ginger paste – 1/2 teaspoon
Garlic – 2 teaspoon
Salt to taste
Tomato – 2 (slice it thinly)
Oil – 3 teaspoon + 1 teaspoon
Kitchen masala or subji masala – 3/4 teaspoon
Coriander powder – 1/2 teaspoon
Turmeric powder – 1/2 teaspoon
Method:
Wash and cook sweet potato with salt. When you press it with finger you should be able to mash it. Add salt and 1/4 cup of water and cook the vegetables. Keep it aside
Heat the pan with 3 teaspoon of oil. Add sliced Onion fry till slight brown in color. Add ginger, garlic paste. and fry for a min.
Add Tomatoes and fry till mushy. Add Masala powder, coriander powder, turmeric powder. Mix well. Fry till raw smell goes off from the masala.
Add onion tomato paste. Mix well. Fry till it reaches thick consistency. Add coriander leaves mix it well
Fold it and make sure you see all the side. Pre heat oven at 180 degree C
