Black rice salad with Avocado dressing – Salad recipe – Healthy recipe – Starter Recipe

Starting on a diet doesn’t have to be boring.. Also Having salad for one meal can be interesting too. I had this Avocado dressing in my recent US trip.. Normally I use Lemon juice to give a tangy taste. However the sauce I had was different. As we discuss this I realized this is from Vinegar. So I decided to try it out using vinegar. I have tried it with Power blend greens, Dragon fruit, Fig and Black rice. You can add this sauce to your favourite salad too..I made the dressing with buttermilk but you can have it with Greek yogurt too.
Ingredients:


For Dressing (for 2)

Avocado – 1/2 (small size)
Cliantro – 1/4 cup
Green chillies – 1
Buttermilk – 1/2 cup
Water as required
Salt to taste
Vinegar – 1 to 2 teaspoon (adjust to your spice level)
Roasted sesame seeds – 1 teaspoon

For Salad

Green blend – 1 cup (I have used baby spinach, Kale, Rocket)
Black rice – 1/4 cup (cooked)
Dragon fruit – 10 pieces (1/4 inch cube)
Fig – 1 (medium size)
Roasted Almonds – 10 (optional)


Method:

Lets prepare the dressing. Add all the ingredients under For dressing section except Sesame seeds in blender or food processor. Grind to smooth paste. Add required water to get desired consistency. Add Sesame seeds mix well. Now dressing is ready

Now gather all the salad ingredients and arrange it in serving plate. Mix well. Drizzle the dressing and serve

You can serve chilled too

    Black rice and dragon fruit soo interesting why did I not check here before. I bought dragon fruit the other day kept looking for a good recipe it rotted and I wasted such an expensive fruit. Pinning this too.
