When I first tasted this the cookies were crunchy, Flavourful and less sweet. I can get the flavour from black sesame seeds and coconut. I really loved the texture and taste. So I requested recipe from my friend. She passed it to me without any hesitation. Her version had 1 egg. I have replaced that with milk.
Ingredients:
Unsalted butter – 250g
Caster sugar – 170g
All purpose flour – 375 g
baking powder – 1 teaspoon
Vanilla essence – 1/2 teaspoon
toasted black sesame seeds – 40g ( I have used Japanese version)
Cornflakes – 150g
Coconut powder – 35g
Method:
Crush cornflakes and make fine powder of sesame seeds. Beat the butter, sugar, vanilla for 3 mins. Add all the dry ingredients
Bring together all the ingredients with hand held beater or spoon. Shape the dough into small balls. Flatten it by pressing between palms. If dough is too dry add Milk to bring together
Pre heat the oven at 170 degree C. Bake the cookies for 15-20 mins or till the sides start to brown. Remove it and cool it down completely
Store it in air tight container and enjoy
