I love vegetable based chutney. The other day I had some bottle gourd left in the fridge after making bottle gourd dosa. I was looking for some vegetable base chutney for my dosa so I decided to use bottle gourd. Initially I was doubtful about the outcome as bottle gourd gives out water so worried that chutney will be watery and taste will be more diluted. To my surprise it came out very nice..
Ingredients
Bottle gourd – 2 cups (chopped into 1/2 inc cube)
Tomatoes – 1 medium (chopped)
Bengal gram dhal / Kadalai parrupu – 2 tablespoon
Red chillies – 3-5 (adjust to your spice level and Chilli spice level)
Salt to taste
Onion – 1 Medium (Sliced thinly)
Curry leaves – 10
Oil – 2.5 teaspoon
Coriander leaves – 2 tablespoon
Curry leaves – 10
Mustard seeds – 1/4 teaspoon
Urad dhal – 1 teaspoon
Dry chilles – 2 for seasoning
Method
Heat the pan and add 2 teaspoon. Add Bengal gram dhal and fry till brown. Add onion and fry till transparent. Add tomatoes and fry till mushy. Add bottle gourd, Coriander leaves, salt and red chillies.
Fry till it is cooked. Let it cool down and grind to smooth paste.
Heat the pan add rest of the oil. Add mustard seeds and let it pop. Add curry leaves, urad dhal and dry chillies and fry till urad dhal till it is brown. Add grinded chutney and mix well.
Serve it

Next time I will make this chutney with bottle gourd, I usually make curry with them.
