Muthiya is one of the snack/ breakfast I miss from the days in Trichy. We had one guju family as neighbours. I was searching for a muthiya recipe for a while and a couple of months back we had potluck and one of my friend brought Muthiya and it was so tasty, I even packed the leftovers. She made it with Coriander leaves. I had asked her to share the recipe. Last month when My husband went to India my mum (in my Instagram)gave me all the vegetable from home garden. So I decided to use bottle gourd for this recipe. It came out well. Everyone in the family loved it
Ingredients:
Bottle gourd / Doodhi – 1 cup
Semolina / Rava – 1/2 cup
Besan flour – 1/2 cup
Wheat flour – 1 cup
Salt to taste
Ginger Garlic paste – 1 teaspoon
oil – 2 teaspoon
Turmeric powder – 1/2 teaspoon
Red Chilli Powder – 1/2 teaspoon
For Seasoning
Oil – 2 tablespoon
Mustard seeds – 1/2 teaspoon
Cumin seeds – 1 teaspoon
Green chillies – 1 or 2 (Chopped)
Mint leaves – few (chopped)
Coriander leaves – 1 tablespoon
Sesame seeds – 1 teaspoon
Hing / Asafoetida – 1/4 teaspoon
Powdered sugar – 2 teaspoon (optional)
Method:
Peel and grate bottle gourd. Squeeze with hand to remove extra water.
Add 1 cup of bottle gourd and rest of ingredients under Ingredients section. Make a stiff dough with required water
Leave it aside for 30 mins. Grease your hand with oil. Make small logs
Grease idli plate with oil. Steam it in idli cooker / plate for 10-12 mins or till it is cooked
Remove it and let it cool down. Once cool down slice it and keep it aside. Heat 2 tablespoon of oil in a pan. Add mustard seeds, cumin seeds. Let it crackle. Add rest of the ingredients except sugar and coriander leaves.
Add Sliced Muthiya and in medium flame cook till it is crisp. Add sugar and mix well. Add coriander leaves & switch off
Serve hot with mint or sweet chuntney
