Brinjal (Eggplant) Curry

I seldom do Brinjal curry as rest of the family not found of it. I do rice or gravy for chapatti which all of us like. Today being long day in school kids normally have lunch at school and the lunch is just for me. So decided to do the brinjal curry. It is simple and easy recipe. If you use fresh brinjal it is tasty also


Ingredients
Brinjal (Eggplant) – 5 to 6 Nos (small size)
Sambar powder – 1 tablespoon
Turmeric powder – a pinch


Ginger – garlic paste – 1 teaspoon
Oil – one tablespoon
Mustard – 1/4 teaspoon

Urad Dhal – 1 teaspoonCurry leaves – few
Salt – 1 teaspoon



Method:

Cut the brinjals into medium size pieces and put it in water. 
In a kadai put oil and when it is hot add mustard. When it pops up add Urad dhal and curry leaves.Fry till dhal is brown.
Add brinjal pieces and sprinkle little water. 
Add Sambar powder and turmeric powder. Mix it well.
Reduce the heat and cover with a lid. Cook until the brinjals are soft. 
Remove from stove & Serve
