I am big fan of Mallika Badrinath. This recipe is from her book with modification according to the taste
Normally we don’t eat much of Brinjal but this one is our favourite as side dish to chapatti
Ingredients:
Brinjals – 1/4 kg
Onion – 2
Chopped Tomatoes – 1/4
Chilli powder – 1 1/2 teaspoon
Ginger Garlic paste – 2 teaspoon
White Sesame Seeds- 1 tablespoon
Roasted Peanut – 1 tablespoon
Coriander seeds – 1 tablespoon
Oil – 2 tablespoon
Method:
Cut Brinjals and put it in water till you need it
Heat Kada and when it is hot add White Sesame Seeds, Roasted Peanut and Coriander seeds
Dry roast White Sesame Seeds, Roasted Peanut and Coriander seeds.
Transfer roasted Sesame Seeds, Roasted Peanut and Coriander seeds to mixie and powder it.Keep it aside
Heat the kada
Add one tablespoon of oil add chopped Onion and fry till it is golden
Add tomatoes and fry till pulpy
When it is cooled down transfer to mixie and grind to paste
Add remaining oil to kada and when the oil is hot add ginger garlic paste and fry till raw smell goes off. Add Brinjal and fry it for 3 mins
Add Water and salt and cook Brinjal
Add ground paste, chilli powder, Sesame Seeds, Roasted Peanut and Coriander seeds powder
Le it boil for 10 mins
Switch off and transfer to serving bowl
