Broccoli Paneer Potato Grilled Sandwich – Breakfast recipe – Kids Lunch box recipe

My kids love to have sandwiches in their lunch box or brunch. I normally do broccoli wrap. Last weekend when I wanted prepare wrap I realized that I run out of Wrap. I had loaf of bread. So wanted to do sandwiches instead. Kids loved this stuffing. It is quite balanced with goods of broccoli and carb from potoato and protein from Paneer. Perfect for your kids lunch box too
Ingredients
Potato – 1
Broccoli – 3 cups
Paneer – 1/2 cup (crumbled)
Oil – 2 tablespoon
Cumin Powder – 1 teaspoon
Turmeric powder – 1/4 teaspoon
Salt to taste
Garam masala – 1/2 teaspoon
Red chilli powder – 1/2 teaspoon
Salt to taste
Lemon juice – as required
Coriander leaves – 2 tablespoon



Method:

Cook the potato and remove the skin. Grate paneer. Keep it aside.

Heat the pan and add a teaspoon of oil. Add garlic and ginger. fry till garlic is brown in color. Add onion and fry till it is transparent. Add garam masala, cumin powder and turmeric powder. Fry till raw smell goes off. Once cool down grind to smooth paste

Cook the potato and mash it. Add grated Paneer/ Cheese and mix it well. Add grinded paste and mix well

Add broccoli in a pan. Add salt and 1/4 cup of water. Close the lid and let it cook.

Add smashed potato, cheese and onion mixture. Cook it for 3-4 mins. Switch it off. Stuffing is ready to be used

to Make sandwich using flat pan / tawa Apply butter to the bread and toast it on both side. Toast it on the flat pan and spread the stuffing between 2 breads and serve

To make sandwich in toaster, Apply butter to the bread and toast it on both side. Toast 2 breads. Spread the Broccoli stuffing on the top of one bread and close it with another bread. 

Serve hot or pack it for later use.
