Simple Butter Beans Tomato Rice Recipe – One Pot Meal

I love butter beans. Since we don’t get fresh butter beans in Singapore (At least I haven’t seen) I normally get the canned butter beans. I had a few tins in the cupboard for a while. I wanted to do Chickpeas and Tomato Rice but forgot to soak chickpeas so I decided to use Butter beans. I wanted to use very little oil. So instead of frying tomato / onion I cooked it before grinding to make paste. I loved that taste!
Ingredients:


Basmati Rice – 1 cup
Butter beans – 1 can
Onion – 1 (large)
Tomatoes – 4 (medium)
Garlic – 4 pods
Ginger – 1 inch
Red chilli powder – 1/2 to 3/4 teaspoon (adjust to your spice level)
Salt to taste
Coriander leaves – 1 tablespoon (finely chopped)
Turmeric powder – 1/4 teaspoon
Garam masala – 1/2 teaspoon
Oil – 1 teaspoon
Soya milk – 1 cup
Water – 1 cup



Method


Wash and soak Basmati  rice for 15 mins. Drain the water and keep it aside. Open the can and drain the water from butter beans. Wash couple of times and keep it aside. Mix soya milk powder in a cup of water and keep it aside

Heat water and add tomatoes. Boil it till tomato skin breaks. Reduce the water. Add sliced onion, garlic and ginger. Cook it. Switch it off. 

When it cool down grind to smooth paste with turmeric powder, Garam masala, Red chilli powder  using same water used for cooking

Heat 1 teaspoon of oil. Add grinded paste continue to stir till it reduces into 1/2.  butter beans and mix well. Cook for 30 sec. Add rice and mix well

Add soya milk, Salt and water and close the lid. Let it cook. 

Switch it off and garnish with coriander leaves and serve
