This is one of my special rice. I always like Coriander and coconut combination in any dish. My husband who is not a big fan of coriander leaves chutney likes this dish.. This is can be all in one dish and easy to prepare. We can do the gravy ahead of the time and mix it with rice when needed. Base recipe is from Mallika Badrinath
Ingredients:
Rice – 1 Cup
Cabbage – 300g (Shred it into thin pieces)
Onion – 2 (finely chopped)
Salt as required
Oil – 2 tablespoon
Grated Fresh Coconut – 2 tablespoon
Coriander leaves – 1 Bunch ( 1 and 1/4 Cup)
Roasted Gram – 2 tablespoon
Green Chillies- 6 (adjust to your taste)
Ginger – 1/2 inch
Mustard Seeds – 1/4 teaspoon
Urad Dhal – 1 teaspoon
Bengal Gram Dhal – 1 1/2 teaspoon
Cumin seeds – 1/2 teaspoon
Red chillies – 2
Cashewnuts – 10-15 (Cashewnuts taste better but if u prefer u can use almonds)
Finely cut coriander leaves – 1 tablespoon
Curry leaves – 10
Method:
Cook Rice and spread the rice (make sure you cook the rice till each grain is separate). Allow it to cool completely
Heat 1/2 teaspoon of oil and fry cashewnut till brown and keep it aside
Fry coriander leaves, coconut, green chillies, ginger and roasted gram. And grind to smooth paste. Paste should be thick..
Heat rest of the oil in the kada add mustard seeds and when it pops add urad dhal, Bengal gram dhal, Curry leaves, Cumin seeds, broken red chillies and fry till dhals are golden brown.
Add onion and fry till crisp. Add cabbage and fry it till it is cooked.
Add the ground masala and salt and fry till nice smell comes
Add cooled cooked rice mixed well and fry in high flame for 3 – 4 mins
Serve hot
