Capcicum (Capsicum) Tofu Salad

These days I include capcicum into my diet more often. Capcicum has unique taste it is good for making salad. This is simple yet can be served as starter. This recipe is an option for dieters. I was just playing with dressing and my whole family loved this combination.. Now this is done at least once a week.. Enjoy this healthy starter


Ingredients


Yellow/green/red capcicum (capsicum) – 1/2 each (chopped finely)
Onion – 1 Chop finely
Carrot – 1/2 chopped finely
Firm Tofu – 1 Cup (reduce it if you are not a big fan of Tofu)
Coriander leaves – 1 tablespoon (finely chopped)


For Dressing
Apple Cider Vinegar – 2 teaspoon
Tomato Sauce – 1 teaspoon
Chilli sauce – 1 teaspoon
Green Chilli sauce – 1/2 teaspoon
Salt per taste
Pepper powder – 1 teaspoon



Method:

Cut tofu into one inch pieces. In a non stick tawa shallow fry Tofu till it sides are brown. I didn’t add oil if prefer add 1/2 teaspoon of oil for frying tofu



Mix all the dressing ingredients in a bowl

In a broader vessel add the  vegetables, Onion and salt mix well

Mix in the dressing and mix well. Add fried Tofu and mix well



Add in coriander leaves and mix well. Serve chilled or at room  temperature
