Capsicum Rice

Our family prefer variety (mixed) rice over traditional rice, sambar, rasam curd etc… For me it is easy and good way to include veggies into our meal.Capsicum rice is one of those recipe which is easy to do so it perfectly fit for lunch box recipe (as it is easy and less time consuming so definitely fit for urgent cooking for busy morning)

Ingredients:

Basmathi/Raw rice- 2 cups ( I have used brown rice)
green bellpepper-2 small ,cut into thin slices (U can use mix colors Yellow, Red, Green. I had Green so used Green)
onion-1 cut into thin strips
Garlic – 2 pods chopped finely
ginger-a small piece chopped finely
Turmeric powder- 1 0r 2 pinch
salt to taste
coriander leaves- a few chopped finely
copra (dry coconut)-2 tsp ( I ran out of dry coconut so used fresh coconut)
Idli Podi – 2 Tablespoon
Chilli Powder – 1 teaspoon (Adjust to ur spice level)
cinnamon- a small piece
cloves-2
oil- 2tbsp
mustard seeds- 1/4 tsp
chana dal- 1/4 tsp
Roasted Peanuts- 1 tab;espoon
Curry Leaves- a few
Lemon Juice – 1 tablespoon (Optional, Adjust to ur taste)



Method



Cook rice and set aside to cool down.
Heat oil in a pan and add mustard seeds and when start to pop up add channa dhal and fry till it is brown. Add curry leaves and fry for 20 sec

Add cashews and peanuts and fry till it turn golden brown. Add chopped onions,garlic and ginger . Fry for sometime and when the onions become transparent 

Add the sliced capcicum, Fry for a couple of minutes in high heat a and add the idli podi , Chilli Powder, Coconut, salt and turmeric powder.
Fry till the oil comes out on top and then add Roasted Peanut, Grated Coconut and mix well  
Add the cooked Rice and Lemon Juice. Mix well and let it cook for 3-5 mins

Mix well and garnish with chopped coriander leaves.

Serve hot with chips, Rice Crackers and raita.
