Caramel Kheer – My childhood fondness for caramel won out this time. But standing on one foot and thinking about burned syrup stopped me. I was tempted to try this recipe at least once in my life, but as I previously stated, the fear of burning the syrup and having a permanently damaged sauce pan scared me off.
Caramel Kheer has been on my wish list for quite some time. Caramel, if you haven’t heard of it [you’re probably living under a rock, just kidding], is basically just sugar melted into a liquid that sets in the blink of an eye [yes, very difficult to handle]. The Caramel Kheer was delicious, and there was also a tip to keep the kheer from becoming twisted up.
If you’re making Caramel Kheer, add the sugar syrup when the kheer is fuming hot, or the kheer will have chunks of sugar syrup/caramel, which is heavenly, but the kheer won’t be kheer]. I hope you all enjoy this recipe.

Ingredients for making Caramel Kheer
- Vermicelli/ Semiya – 1/2 cup
- Milk- 2-3 cup (adjust to preferred thickness)
- Sugar – 1/2 cup to 3/4 cup (adjust to sweetness)
- Cashew Nuts – 1 tablespoon
- Raisin – 1 teaspoon
- Ghee – 3 teaspoons
- Cardamom powder – 1/4 teaspoon
Step by step instruction to make caramel Kheer
Step 1: Heat ghee in pan. Add cashew, raisin and fry till golden brown. Drain it. In same ghee add vermicelli and fry till nice aroma released. Add milk and cook it. Remove it
Step 2: Add milk and cook it. Remove it
Step 3: Heat Sugar in a pan. cook till sugar is melt stir continuously. Once sugar syrup turn golden switch it off
Step 4: Add to cooked Vermicelli and mix well. Add fried nuts. Mix well
Mix well. Switch it off. Enjoy hot or chilled!
Notes
- Switch off the flame when you see the sides starts turning golden. Otherwise it will get deeper in color which could make it bitter.
- You can use washed and roasted rice instead of Semiya/ Vermicelli
- You can add 1/4 cup of condensed milk to make it more richer
- You can use mixed nuts in the place of Cashew
Health benefits of Kheer
- You can make it healthier by reducing sweetness, Replacing milk with skim milk
- It is quick fix to sweet cravings it is definitely healthier than deep fried sweets

Ingredients
- 1/2 Cup vermicelli / Semiya
- 2-3 Cup Milk (Adjust) adjust to desired thickness
