Even though I love Kolukattai my kids are not a big fans of it. This week since both of them are out of home I got to try try a different version. I have seen Carrot Madak in few blogs. I had book marked it for quite sometime. I wanted to try both savoury and sweet version. Both turned out pretty good and I had it for my next day breakfast too. It is a good way to give vegetable to your kids. I have used store bought idiyappam flour. You can use Kolukattai flour or home made rice flour.
Ingredients:
For Stuffing
Sweet Version
Carrot – 1/4 cup
Coconut – 1/4 cup
Jaggery – 2 tablespoon
Cardamom – 1/4 teaspoon
Ghee – 1 teaspoon
Raisin – few
Cashew – 3/4 teaspoon
Savoury Version
Carrot – 1/2 cup
Coconut – 2.5 tablespoon
Green chillies – 1 (finely chopped)
Cashew – 1 easpoon
Ginger – 1/4 teaspoon
Salt to taste
mustard seeds – 1/2 teaspoon
Urad dal – 1 tespoon
cumin seeds – 1/8 teaspoon
Coriander leaves – 1 teaspoon
ghee – 1 teaspoon
For outer skin
Idiyappam flour – 1 cup
Salt to taste
Oil for greasing idli plate & hand
boiling water to make dough
Method:
Sweet Stuffing
Heat pan with ghee. Add raisin and cashew. Fry till slight brown add Carrot and fry till it is cooked
Add coconut and jaggery. Add cardamom and mix well.
Continue to cook till thickens. Switch it off and keep it aside
Savoury Stuffing
Heat ghee add Mustard seeds and let it pop. Add Urad dal, cumin seeds, green chillies and cashew. Fry till brown color. Add carrot, salt and fry till cooked.
Add coconut and mix well. Fry for a min. Add Coriander leaves and mix it. Switch it off. Keep it aside
Let’s make kolukttai
Take flour and salt in broader bowl. Add boiling water bit by bit and make smooth dough
Grease idli plate with oil. Grease your hand and take small portion of dough and using your fingers start thinning outside and move in side to make cup like shape (see video for more details)
spoon sweet stuffing and bring it together to get modak shape. Arrange it in greased idli plate
Repeat again this time keep savoury filing. Repeat till all dough done
Now steam it in idli cooker till it is cooked (8 to 10 mins) or you see outer skin looks glassy
Remove it and serve hot!
