During my younger up days kozhukattai is festival food but these days I make kozhukattai for tea time . after school snack too. I tried cashews and dry coconut stuffing at my friends place. It was so tasty. Other day I was looking to make after school snacks for my kids who came home little earlier than normal time. As this pooranam doesn’t require any soaking or cooking I decided to do it. It is indeed quick and simple yet healthy snack. Do try it out. You can make this dry Pooranam during weekend and keep it in air tight container.
Ingredients
For Pooranam (Stuffing)
Cashew – 1/2 cup
Dry Coconut – 1/4 cup
Cardamom powder – 1/4 teaspoon
Salt pinch
Jaggery – 2 tablespoon or more (per your taste)
For Outer skin
Rice flour / idiyappam flour – 1 cup
Salt to taste
Oil – 1 teaspoon
Hot water as needed
For Modak
Oil as needed
Method:
Prepare outer cover, Boil water with salt. Add that to flour little by little.
Mix well with Laddle. Make a smooth dough once you are able to handle it. Add Oil and knead again.
Keep it in wet cloth till you need it. Make sure your cashew is dry if not keep it in microwave for 2-3 mins mix in between. In a blender make cashew powder.
Add coconut, jaggery and cardamom powder. Powder it again. Keep it aside.
Divide the rice flour into equal lemon size ball. Grease modak mould. Using the Mould make modak (refer to video on how to use Modak)
Fill it with stuffing and close it. Repeat the process and make all the modak
Arrange it in idli plate (or steamer) steam it for 10 mins
Enjoy. It will last for couple of days
