Not sure whether you also experience this.. Both of my kids if they like certain dishes they always want to try the same dish in same way of preparing (no variation) till they are bored with it. For me I need some variety and love to try different kind of mix or food. Cauliflower Fry is one such dish. So this time I told them I am doing something to stuff inside the chapathi and can try the vegetable alone also. So They tried it and loved the flavour of it.
Ingredients:
Granted Cauliflower – 2 cups
Green Peas – 1/4 (I have used frozen peas)
Onion – 1 Onion finely chopped
Tomato Puree – 1/2 cup or Tomatoes – 2 – Finely Chopped
Ginger Garlic Paste – 1/2 teaspoon
Red Chilli Powder – 1/2 – 1 teaspoon
Coriander powder – 1/2 teaspoon
Cumin seed powder – 1/2 teaspoon
Subji Masala – 1/2 teaspoon
Cinnamon – 1/2 Inch
Cloves – 1 or 2
Bay Leaves – 1 leaves
Oil – 1 tablespoon
Coriander Leaves – 2 tablespoon (finely chopped)
Salt per taste
Turmeric Powder – 1/4 teaspoon
Method:
Grate the cauliflower. Heat the kada and add 1 teaspoon of oil and fry the cauliflower till brown color. Keep it aside
Cook frozen peas and keep it aside (I normall thaw it to room temp and cook in microwave for 3-4 mins)
Blanch the tomato and remove the skin and make it to paste.
Add rest of the oil in the kada. Add cinnamon, Clove and bay leaves and fry for 30 sec. Add onion and fry till it is in brown color. Add ginger garlic paste and fry till raw smell goes off. Add Tomato and fry well. Add tomato and fry for another 1-2 mins. Add Coriander powder, Cumin powder, chilli powder, subji masala, salt and fry for another 2 – 3 mins.
Add grated Cauliflower and mix well. Let it cook for 7-8 mins. Add Peas and mix well. Cook for another min or 2
Garnish it with coriander leaves. Enjoy it with rice or roti or even as stuffing in chapathi
