I love to try different variety of idli. I do dal / dhal uttappam often. I wanted to try idli with that. It came out so nice. When you grind the Urad dhal fluffy and dhal/ rice mixture into slight coarse batter you can get very soft idli. I have tried this most of my other varieties. It never failed me. This idli my family didn’t even notice any change from normal idli. Healthy yet no compromise in the taste.
Ingredient
Chana dal / split bengal gram dhal – 1 cup
Idli rice / par boiled rice – 3 cups
Urad dhal – 1 cup
Fenugreek seeds – 1/4 teaspoon
Salt to taste
Method:
Wash and soak Rice, Chana dal together for 6-8 hrs or overnight. Wash and soak Fenugreek seeds and urad dhal separately for 6 hours or overnight.
Grind Urad dhal till it is fluffy adding water at regular intervals. Remove it and keep it aside.
Grind chana dal, Rice into little coarse batter.
Add back the urad dhal and grind together with salt for 1 min.
Ferment the batter for 7-8 hours or overnight
Mix well the raised / fermented batter. Grease the idli plate / or place the wet cloth in traditional idli plate. Pour the idli batter and steam it in idli cooker for 10 mins or till when inserted a spoon it comes out clean. Remove it from idli plate
Serve hot with your favourite chutney
