I always make kothu chappathi, caramelized chapati, or Chapati noodles with leftover chapati. If I wanted to make this for a snack I purposefully make a few chapatis more. if you have a few left of chapathi in the fridge you can make various different snacks/ breakfast or even dinner for kids. You can pre-make chapati during your weekend so that you can make a quick weekday special. you can use your own stuffing with your favourite vegetables you can add your millets to make it as a meal.
Ingredients
For stuffing
Onion -1 (finely chopped)
garlic paste – 1 teaspoon
Paneer – 10 small pieces
mixed vegetable – 3/4 (capsicum, corn, peas)
Cooked potato – 1 (small to medium)
Chickpea – 1 tablespoon
salt to taste
Turmeric powder -1/2 teaspoon
Red chili powder – 1 teaspoon
Red chili flakes – 1/2 teaspoon
Oil – 3 teaspoon
Coriander leaves – 1 tablespoon
For sandwich
Leftover chapati- 4
butter as needed
Sauce as per your choice (I have used sweet chutney)
Cheese of your choice as needed
Method
Heat oil. Add onion, ginger-garlic paste. Fry till the raw smell goes off. Add Red capsicum & salt cook for a min. Add corn, peas, chickpea (I have precooked it). Mix ell
Add Paneer, and mix well. Add cooked potato mix well. Add turmeric powder, Red chili powder, chili flakes. Mix well. Cook for another 2-3 mins. Add coriander leaves. switch it off
Take chapati spread sauce of your choice. Add stuffing, cheese close it with another chapati. Spread butter on top
Serve hot
