- I am looking for simple yet healthy recipe with yogurt. As I am on liquid diet I am having yogurt based drink/ soup at least once a day. I remember this recipe which I have noted down from the magazine. It is really cooling and refreshing. I made this with 0% greek yogurt. You can replace that with any other low fat yogurt
- Ingredients:
Cucumber – 1 cup (chopped)
Yogurt – 1/2 cup
Low fat buttermilk – 1/2 cup
Lemon juice – 2 teaspoon
Spring onion – 1 stalk (both green and white)
Garlic – 1 pod
Water as required (I have added 1/4 cup water)
Salt to taste
Pepper – 1/2 teaspoon
Mint leaves – 1/4 cup
- Method:
- Keep 2 tablespoon of chopped cucumber. Add rest of roughly chopped cucumber, garlic, lemon juice, butter milk, 1/2 of mint, lemon juice and grind to smooth paste.
- Add spring onions, water and Mint leaves and run till spring onion and mint leaves roughly grinded
- Chill it. Serve it with pepper powder and reserved cucumber
