My first son loves anything with Maida / flour. But he was not a big fan of onion so I thought kothu parotta may not be his choice of food. But to my surprise when my mum did he liked so much. So when I am back in SG I have decided to try the chilli parotta. They enjoyed every bit
Ingredients
Parotta – 4 ( I have used ready made one)
Capsicum – 1/2 each ( I have used all 3 color capsicum 1/2 each)
Onion – 1
Ginger Garlic paste – 1 teaspoon
Red Chilli powder – 1 teaspoon
Sambar powder – 1/2 teaspoon
Cabbage – 1/2 cup
Spring onion – 2 tablespoon
Coriander leaves – 2 tablespoon
Mint Leaves /Pudhina leaves – 1 tablespoon
Oil -3 teaspoon
Garam masala – 1/2 teaspoon
Method:
Slice the parotta in preferred shape and size. Keep it aside
Add Oil. When it is hot add onion and fry till transparent. Add ginger garlic paste and capsicum and fry for 2 mins in medium high flame. Add Cabbage and mix well. Add all the masala powders and mix well. Fry for additional 1 min. Add spring onion,Mint leaves and coriander leaves and mix well. Switch off and keep it aside Just before serving add pieced parotta and mix well. fry for another 2 mins. And serve hot.
