Chocolate Peanut Butter Cupcake




My Son is in compulsory boarding school for this term and he is having tough time with the food there. He comes home every weekend so I wanted to give him surprise treat with all his favourite food. Cake is one of his big time favourite. I tried this for him. Entire weekend he was enjoying it. This came out extremely well. Even my husband who is not a big fan of chocolate cake enjoyed it
Ingredients
All Purpose Flour – 11/2 Cup
Sugar – 1 Cup
Cocoa Powder – 1/4 cup
Baking soda-1 teaspoon
Salt per taste
Oil – 1/4 cup
Peanut Butter – 3 tablespoons
Vanilla extract – 1 teaspoon
vinegar – 1 teaspoon
water- 1 cup
sprinkers – as per need


Method:


Pre Heat the oven at 180 degrees
In a large bowl, whisk together flour, cocoa powder, baking soda and salt. Set aside.

In a separate bowl, whisk together oil, peanut butter, vanilla extract, vinegar, sugar and water till sugar dissolved.

Stir in dry ingredients in 2 batches and mix well. Don’t leave any large lunps. You can use electric beater for mixing (don’t over beat it)

Pour batter into paper-lined cupcake mold till 3/4 full. Sprinkle the sprinklers as you need.

Bake for 20-22 mins or till a toothpick comes out clean when inserted into the center of the cup cakes
Allow it cool
