I wanted to try this Coconut flavoured Waffles for quite sometime. I do know my family has liking towards coconut. Same proposition can be used for making pancake.. I made it as Waffles as my kids prefer waffles over pancake. The grids has to be hot before pouring the batter to get good crispy waffles. I loved the flavours in this waffles
Ingredients:
Whole wheat flour – 1/2 cup ( I have used the freshly grinded wheat flour)
Oats Flour – 1/2 cup
Baking soda – 1/4 teaspoon
Baking powder – 1 teaspoon
Brown or white sugar – 2 teaspoon
Coconut oil- 2 tablespoon (I have used extra virgin oil)
Coconut Milk – 1 cup
Vanilla essence – 1 teaspoon (optional)
Lemon Juice – 1/2 teaspoon

Lemon Juice – 1/2 teaspoon
Method:
Sift Oats flour, wheat flour, baking soda, Baking powder, Lemon juice. Add room temperature melted coconut oil and coconut milk.
Whisk it. Grease the waffle plate with non stick spray or butter. Heat the plate
Pour the laddle full of batter till it covers all the holes. Close it and cook it as per instruction of the waffle maker.
Remove it and serve hot

I am drooling at those waffles… Pulled out my waffle attachment and made them only once… must try to make them again…
