Corn flour Halwa is a very easy and simple Diwali sweet. I have tasted this only from stores.. My mum doesn’t make this that often.. I have seen this colorful sweet in the mixed box. I bookmarked recipe from here. Maybe the color attracted me. After that I have seen this recipe in many blogs. The Halwa looked glossy and perfect in texture. So I decided to try it out for this diwali. It came out pretty good. I have used brown sugar so the color is more deep.
Ingredients:
Corn flour – 1/2 cup
Sugar – 1.5 cups
Water – 1 cup + 1 and 1/2 cups
Ghee – 3 tablespoon
Cashew nuts and Melon seeds – 1/4 cups, chopped finely
Cardamom powder – 1/4 teaspoon
Food colour – a small pinch (optional)
Method:
Mix the cornflour with 1.5 cups of water and food color (if using). Make sure there is no lumps. Grease the plate with Ghee and keep it ready.
Hea pan and add 1 teaspoon of ghee and add chopped nuts and fry till slight brown in color. Set aside
Heat pan with sugar. Add 1 cup of water and stir till sugar is dissolved and you start to see bubbles. No need of any consistency
Reduce the flame and add corn flour mixture. And continue to stir. You will start to see un uniform cooking continue stir to avoid any lumps. Cook it in low flame
Add 1/2 tablespoon of ghee at regular interval. When it start to leave the sides add nuts and cardamom powder.
And mix well. At one stage it will become thick and will come together as whole mass. At this point transfer this greased plate.
Let it set for an hour or 2. Nice slice it in desired shape
