Corn Methi Pulav – Simple one pot meal

I do one pot meal for most of Sunday lunch. It is quick and I use the fresh vegetables that I had bought  the day before,  my family’s favourite. I have done this with fresh fenugreek leaves and frozen corn. It tasted awesome. Nice combo of flavours. You can serve any spicy vegetarian gravy or poriyal with this rice. 

Ingredients


Basmati rice – 1 cup (200 grams)
Water – 1 and 1/2 cups
Methi leaves / fenugreek leaves – 1 cup
Sweet corn – 1 cup (if you are using fresh corn cook it and take the kernels out of it)
Cumin seeds – 1 teaspoon
Onion – 1  (sliced thinly)
Ginger – 1/4 teaspoon 
Garlic – 1/2 teaspoon (chopped finely)
Pepper powder – 1/2 teaspoon
Garam masala – 1/2 teaspoon
Turmeric powder – 1/4 teaspoon
Salt to taste
Milk – 1/2 cup
Oil – 2 teaspoon
Cilantro / Coriander leaves – 1 tablespoon 
Cream – 1 tablespoon (optional)



Method:

Wash and soak Basmati rice for 10 mins. Drain the water and keep it aside
Heat one teaspoon of oil and add Onion and fry till transparent. Add ginger and garlic paste fry till raw smell released. 

Add baby corn, Add garam masala, turmeric powder, pepper powder and required salt. Fry for another 2 mins.

Add methi leaves and fry for 2 mins. Add Water. Mix well.

Add milk. Let it boil. Now add basmati rice 

Cook it with lid closed. Add cream when the rice is 3/4 cooked. Mix it well and cook it completely

Add coriander leaves and mix well. Serve hot
