Cornflakes Cookies

My son is big fan of cookies. Since they are in holiday they need something to eat around 11 AM every morning. So instead of buying from store I decided to bake some cookies. I brought cornflakes sometime ago and it was lying on the self. I wanted to make use of it. So decided to Cornflakes cookies

Ingredients

Unsalted butter – 1/2 Cup (at room temperature)
Brown sugar – 1/2 cup
All Purpose flour – 1 1/2 Cup
Corasely powdered cornflakes – 1/2 Cup +1/4 cup

Vanilla Essence – 1/2 teaspoon
Baking powder – 1/2 teaspoon
Oil – 3 tablespoon ( I have used olive)
Salt –  a pinch
Warm water – 2 tablespoon (optional)



Method
Thaw the butter to room temprature. Preheat oven at 180 degree Celsius
Cream the butter and sugar in a bowl using electric mixer or wooden spoon. Add Oil, vanilla essence and mix well.

Sift salt, flour and baking powder together till all are mixed well.  Now add this to wet ingredients and 1/2 cup of cornflakes. And mix well. If the dough is too crumbly add water little by little and gently knead till it comes together ( I have used 2 tablespoon of water)

Divide the dough into 3 equal parts and roll each part into 1/4 thickness. Using desired shape cookie cutter make the pieces. Take each pieces and roll it in remaining 1/4 cup crushed cronflakes. Arrange it in baking tray. Bake it for 20 mins or till the sites are brown. Repeat the process till all the cookies are done. Cool down the cookies.

Store it in airtight container. Enjoy it!
