I love to try different varieties of vada. My sons are more inclined to these kinds of snacks than sweet. So I try to do something during our weekend tea time snack or to go with dinner. Recently I have been trying to include whole beans as part of an everyday meal. When I saw this in some blog I have marked it to try. It came out pretty good. Even though it is deep fried Cow beans is really full of fiber and perfect for your fuzzy kids to eat whole beans/vegetables. I didn’t add any vegetables in this version but you can add Grated 2 tablespoon of carrot or chopped Spinach even Fresh methi leaves.
Ingredients:
Cow peas / black eye beans / Karamani – 1.5 cups
Onion -3/4 cups (Finely chopped)
Salt to taste
Green chillies – 3 (Chopped. Adjust to your spice level)
Garlic – 4 pods
Ginger – 1/4 teaspoon
Grated Coconut – 1 tablespoon
Coriander leaves – 1 tablespoon (finely chopped)
Curry leaves – 15 (10 finely chopped)
Mint leaves – few (finely Chopped)
Oil for deep frying
Method:
Soak the black eye beans for 4 hrs. In a blender / food processor take green chilies, ginger, garlic, Coconut, 5 curry leaves and grind to a coarse paste
Add soaked Black eye peas and grind again. Transfer the mixture to broader bowl.
Add chopped Coriander leaves, mint leaves, onion, curry leaves, and salt. Mix it
Heat oil. Take a small lemon size dough and flatten it with your hand. add it to heated oil. Cook till all the sides are cooked till brown color or bubbles subsides
Drain extra oil and take it out. leave it on kitchen tissue paper to absorb extra oil.
Serve hot
