Our entire family loves nuts in any form. So when I saw this eye catching rice at Elephants and Coconut Trees I have bookmarked. I have decided to try it out immediately. As expected my whole family loved it. Especially this is mildly flavoured rice and easy to match with side dishes.
Ingredients :
Rice – 2 cups (Use Basmathi or good quality long grain rice)
Onion – 1 sliced very thin
Butter -3- 4 tsp
Cranberry( dried and sweetened) – 1/2 cup or more if u like
Pistachios – 1/2 cup (I used some cashew nuts too)
Spring onion- 2 chopped
coriander leaves -1 tablespoon (finely chopped)
Salt and pepper powder to taste.
Method:
Heat butter when it melts add onion sliced and fry it till golden brown also the cashews,Pista until they turn golden.Turn in the cranberry and pistachio and switch off flame. Keep it aside.
Wash and soak the rice for 30 mins. Cook the rice with salt and pepper and 2 cup of water.
Add fried onions, cranberry,nuts, coriander leaves and spring onion. Mix well
Serve warm along with your favourite dishes.
