Creamy Pumpkin Soup

We love yellow pumpkin. Almost every week I pick up this vegetable during my weekly marketing. I have posted many pumpkin dishes

Other day in one of the restaurant I have tried creamy pumpkin soup. I was drawn to it’s simple yet addictive taste. I did some search on the net. I was not happy with any particular one. I kind of come up with my own. Everyone loved it. This is definite keeper for me
Ingredients:
Pumpkin – 2 cup (cubed into 2 inch cubes)
Potato – 1 (medium)
Onion – 1 (diced into 1 inch)
Ginger – 1/2 inch (cut into small pieces)
Garlic – 4 pods (chopped into chunks)
Pepper powder – 2 teaspoon
Green chillies – 2
Cream – 1 tablespoon
Olive oil – 2 teaspoon
Salt per taste



Method:
Remove the skin of Pumpkin and potato. Cube it. Heat the kada and add oil. When it is hot add ginger and garlic. Fry till garlic is soft. Add onion and fry till they are transparent. Add green chilli and fry for another 30 sec. Add cubed pumpkin and potato. And fry for 1 min. Add water and salt and cook it till 2 whistle (depends on the texture of pumpkin. If yours take longer time to cook leave it for more whistles). Switch it off and let cool down. 

When it cool down grind to smooth paste. Heat the kada and add grinded paste with pepper, salt and desired amount of water. and let it boil. Add cream and boil for another 20 sec.

Serve hot.
