I normally do quinoa at least twice a week. Recently kids also started to like it. There are no of quinoa dishes posted in my space. I can eat cooked quinoa with sambar also. This quinoa is more Indianized recipe. It really tasted good and quite filling too. You can pack this for your lunch box also
Ingredients
Chopped Carrot – 1 cups
Onion – 1 (chopped finely)
Cooked Quinoa – 1 cup
Curry powder / sambar powder – 1 teaspoon
Turmeric powder – 1/4 teaspoon
Ginger garlic paste – 1 teaspoon
Coconut milk – 1/4 cup (optional)
Vegetable broth – 4 cups
Oil – 2 teaspoon
Cilantro / coriander leaves – 2 teaspoon
Salt to taste
Method:
Cook Quinoa per package. Keep it aside. Heat kada / pan and add oil. when it is hot add Onion and fry till transparent. Add Ginger garlic paste. And fry for 1 min.
Add carrot. Mix well. Add sambar powder, turmeric powder and salt. Mix well and cook for 2 mins. Add coconut milk and mix well. Cook for another 2 mins.
Add cooked quinoa and mix well. Cook for another 3 mins. Stir in between. Add cilantro and coriander leaves.
Serve hot

Inviting but we quinoa is seldom for us. I'm sure I can try with rice for the utmost lovable flavors.
