Curry leaves powder recipe – How to make curry leaf powder step by step recipe – Podi recipes – Powder recipes

My mum normally makes all these kinds of powder and packs for us. I don’t even have to tell her. She roughly knows how long each batch lasts and she prepare the next batch. She makes it with all leaves. This time I told her I wanted take pic for the blog so don’t make it I will do it by myself. So finally I can make this powder. I always have couple of these ready made powder. I used it to make seasoned Left over sevai, Oats upuma or simply add it to the steamed rice with a ghee for my lazy days. It is very handy for your bachelor sons too! 
Ingredients:


Curry leaves – 2.5 cups
Urad dhal – 1/4 cup
Horsegram / Kollu – 1/4 cup (you can replace this with urad dhal itself)
Asofetida – 1/4 teaspoon
Salt to taste
Pepper corns – 5-7
Red chilli – 5-7 (adjust based on your chilli spiciness)



Method:


Wash and pat dry curry leaves. I leave it on tissue or news paper for 1 hr. Dry roast it. I have used microwave. Spread it in a plate as single layer and roast it for 1.5 mins.  I did this in 3 patches

Dry roast Chilli, pepper. Remove it. In the same pan roast urad dhal and horsegram (I had Roasted horsegram so I didn’t take pic).

Remove it. Roast asofetida. Add it to all ingredients. Let it cool down. Grind chilli, dhals first. 

Add roasted curry leaves, salt and powder it.

Store it in air tight container. Enjoy it!
