This is a very simple recipe with Onion and Cashew. This is rich too as it has cashew and cream. This can go well with fried rice or roti … I saw this recipe from one of cook books sometime ago. The other day I had decided to make Chapati last min for our dinner. I didn’t have either any vegetable in stock or soaked any dhal for making gravy. Paneer came to my rescue!. It is also very simple to make
Ingredients
Paneer – 1 cup
Onion – 2 (large. Roughly chopped)
Garlic – 2 (chopped finely)
Ginger – 1 inch (Finely chopped)
Cashew – 1.5 tablespoon (soak it in hot water)
Fresh cream – 1 tablespoon
Green chillies- 4
Pepper corns – 2 teaspoon
Turmeric powder – 1/4 teaspoon
Garam masala – 1/4 teaspoon
Cumin powder – 1/2 teaspoon
Coriander powder – 1/2 teaspoon
Cumin Seeds – 1 teaspoon
Cardamom – 2
Oil – 4 teaspoon
Salt to taste
Method
Soak Cashew in Hot water and grind to smooth paste
Heat the oil add Garlic and ginger fry till slight brown in color. Add onion, Pepper corns and green chillies. Fry till transparent. Switch it off
Heat rest oil in a pan. Add Cumin seeds, cardamom and let it crackle. Add grinded paste. Fry for a min. Add Cashew paste. Cook it in low flame for 3-5 mins
Add Turmeric power, garam masala, cumin powder and coriander powder. Mix well. Fry till oil oozes out. Add Fresh cream mix well
Add paneer. Mix well. Cooke for 2 mins
Close it with Aluminium foil and a plate. Place a heavy object on the top. Let it cook in very low flame for 10 mins.
