Pillow cake is totally new to me. The name attracted me from the first time I saw it. I had bookmarked it from Radhika’s space. I wanted to do this for quite sometime. It sounded very simple and perfect for a weekend brunch / after school snack. I have done it a few times I have tried all wheat flour version first.. My kids prefer this version where I use 50% Wheat and 50% all purpose flour. You can add your favourite chocolate chips, banana, or strawberry. This can be good snack for kids too. I have followed recipe from here except for the quantity of sugar
Ingredients:
All purpose flour – 1/2 cup
Whole wheat flour – 1/2 cup
Salt to taste
Vegetable oil – 1/2 cup
Milk – 1/2 cup (adjust it with hot water if batter is too thick)
Sugar – 1/4 cup (I have used brown sugar)
baking soda – 1/4 teaspoon
baking powder – 1 teaspoon
Lemon zest – 1/8 teaspoon ( I have used lime)
Lemon juice – 1,5 teaspoon
Butter for cooking the cake
Method:
Take everything in a broader bowl. Whisk it to make a smooth batter
Heat 3 in 1 bread toaster plate. Grease it with butter. Pour batter. And cook it. When it is ready take it out
Serve hot

Looks yummy…a good filling snack specially for kids!
It looks superb… I am gonna try it in a waffle maker because I don't have that sandwich maker.. hope it comes out good..
