I wanted to do this last mango season itself. However my kids love fresh mango fruit by itself. So they didn’t allow me to use it in baking. I got one big lot of mangoes from India last week. So there were a few ripped mangos at a time and they cannot finish .. My son reminded me of the cake.. Finally I got some opportunities to try some mango dishes. I will post a few for this season.
Ingredients:
Mango pulp – 1.5 cups (I got it from 1 mango and I have used banganapalli)
Milk – 2 tablespoon
All Purpose flour – 1 cup
Rava / Semolina – 1/4 cup
Baking soda – 1 teaspoon
Baking powder – 1 teaspoon
Cinnamon powder – 3/4 teaspoon
Melted butter – 50 ml
Sweetened condensed milk – 1 cup (I have used low fat)
Method:
Sift together all purpose flour, baking soda, baking powder 2 times. Add semolina and mix well. Keep it aside.
Remove the skin and take the flesh out of mango and grind it with milk, cinnamon powder.
Add melted and cooled butter to the mango pulp and add condensed milk. Mix well
Add dry ingredients and mix well.
Butter the baking sheet and line baking sheet. Pour the cake mix and level it with back of the spoon
Pre-heat the oven to 350 degree F or 180 degree C for at least 10 minutes. Bake the cake batter for 25-27 mins or till when inserted tooth pick comes out clean. Cool it completely and slice it in desired shape
