Grilled Bombay vegetable sandwich recipe – Bombay Veg Sandwich recipe – Simple bread sandwich recipe

My kids are used to peanut butter, nutella or simple cheese sandwich. I love vegetable sandwich. It is light and very refreshing. It is also good to hide vegetables for your picky eaters. If you have green chutney this sandwich can be prepared in no time. This can be served as breakfast, brunch or after school snack. I have added Sweet chutney and cheese but these are purely optional. My kids loved every bit of it
Ingredients


Bread slices – 8 slices
Carrot – 1 (slice it into thin round slices)
Cucumber – 1 (slice it into thin round slices)
Cooked Potato – 1 (slice it into thin round slices)
Green chutney – 1/2 teaspoon per sandwich
Sweet chutney – 1 teaspoon per sandwich
Bread sandwich cheese slices – 1 per sandwich (optional)
Butter / oil – for Toasting bread



Method


Apply oil/butter on one side of the bread. In one of the bread (non butter side) spread green and sweet chutney. 

Place few carrot , Cucumber and potato piece. Heat flat pan. Place the bread in such a way that butter side touching the pan.Place the cheese if using.

Close it with another bread (butter side should be on the top). Toast it and carefully turn it over other side. Toast it till it is done

Serve hot!
