Hot and Sour Vegetable Soup

Our family is big fan of soup and loves fusion or Chinese food. I love any thing with simple. Yeah this combo makes me and them happy. As I stated many times I always big fan of anything with mixed vegetables as it is easy to mix your own favourite vegetables and easy to meet the daily vegetable serving requirement. This soup is one of the dish I used to order whenever I go out lunch in Chinese restaurants.
Ingredients:


Carrot – 3 tablespoon
Cabbage – 4 tablespoon
Spirng Onion – 2 tablesoon (white) 2 tablespoon (green) Finely chopped
Celery – 2 tablespoon (finely chopped)
Tofu – 1/4 cup
Green chillies – 2 chopped into bigger Junks
Capsicum – 4 tablespoon
Soya Sauce – 1 tablespoon
Oil – 1 teaspoon
Corn flour – 1 tablespoon
Lemon juice – 1 teaspoon
Ginger – 1 inch (chop it finely)
Onion – 1 tablespoon (finely chopped)
Chilli sauce – 1 teaspoon
Garlic – 7-9 pods
pepper powder to taste
salt to taste
Sugar – 1/2 teaspoon


Method:


Chop the vegetables finely. Separately chop the spring onion  bulb(white portion) and leaves. Keep it aside

Mix Cron flour in 4 tablespoon of water. Fry Tofu and keep it aside

Head the kada and add oil. When Oil is hot add white portion of spring onion and Garlic. Fry till Garlic is crisp. Add Green Chillies and fry for 30 sec. Add ginger and fry for another 30 sec. 

Add vegetables (cabbage, carrot, celery and tofu), Salt and sugar. And fry for 30 sec. Add water ~4 cups and let the vegetables cooked. Make sure vegetables are not overcooked. You can remove the ginger, lemon grass and green chillies. Add Cron flour paste. Mix well without any lumps.

Add chilly and soya sauce, Pepper powder. Cook for another min. Switch it off and add lemon juice. Decorate with chopped green spring onion and serve hot with your favourite bread.
