I learned this recipe from one my previous helpers. It is a very simple and quick recipe. It is also quite creamy it goes well with idli, dosa, chapathi or even paratha. I have done so many times after that but I never had a chance to do a complete post. This always happens for me esp for those dishes I make more often still not on the blog. This is perfect for clearing your fridge with all the left over vegetables too
Ingredients:
Mixed Vegetables – 1.5 cup (Carrot, Beans, cauliflower, peas)
Bay leaf – 1
Cloves – 2
Cardamom – 1
Cinnamon – 1 inch
Onion – 1 (finely chopped)
Garlic – 3 (finely chopped)
Green chillies – 2 slit into 2
Curry leaves – 10
Oil – 3 teaspoon
Salt to taste
Coriander leaves – 1 tablespoon (finely chopped)
Grind to paste (1)
coconut – 1/4 cup
Green chillies – 5 (Adjust to spice level)
Roasted Gram – 1 tablespoon
Fennel seeds – 1/2 teaspoon
Ginger – 1/2 teaspoon (finely chopped)
Poppy seeds – 1 teaspoon
Grind to paste (2)
Cashew – 2 teaspoon
Melon seeds – 2 teaspoon
Musk melon seeds – 2 teaspoon
Milk – 1/4 cup
Method:
Soak nuts in warm milk for 30 mins. Grind to smooth paste. Keep it aside
Grind all the ingredients under grind to paste (1) section with required water and salt. Keep it aside.
Heat oil in a pan add Bay leaf, Cinnamon, Cloves, Cardamom. Fry for a 20 sec. Add Curry leaves, Green chillies, Onion and garlic. And fry till transparent. Add all the vegetables and required salt. Add coconut paste and 1/2 cup water. Let it boil..
Add 2nd nuts paste. And mix well. Add another 1.5 cup water. Close the lid and let it cook the vegetables in medium flame. Stir in between. Add coriander leaves. Mix well.
Serve hot.
