I saw this recipe when I was looking for simple cake recipe in many blogs. It is so simple that I couldn’t resist making it. I made my own recipe. Pls. use Full fat ice cream low fat will not work as we don’t add any other fat. Sugar in Ice cream is good enough for this. I have tried Wheat flour as well as all purpose flour. I liked the texture from all purpose flour. Wheat flour gave much dense texture. So you can do with both. I am posting with 50% all purpose flour and 50% atta.
Ingredients
Ice cream – 2 cups (I have used 1 cup Vanilla and 1 cup chocolate)
All purpose flour – 3/4 cup
Atta – 3/4 cup
Salt a pinch
baking powder – 1 teaspoon
Method:
Keep ice cream outside and let it melt. Sift flour, salt and baking powder. Add flour to melted ice cream. mix it gently
pour this to buttered baking dish. Tap it few time & level it with spoon. Pre-heat the oven at 180 degree C
Bake it for 22 mins to 25 mins or till inserted tooth pick comes out clean. Let it cool down and slice it and serve

very interesting..though have seen using ice cream in making cakes but haven't tried yet…this looks so soft n spongy !!
