Every week we have bread 2 days a week one day with normal bread toast with peanut butter, Nutella, or avocado. Another day with stuffing. Last week I had a few vegetables and no potato. So decided to simple Italian spiced sandwich. My son and husband both loved it. All you need is 20 mins to make this sandwich. Perfect for breakfast or snack box. You can make this more healthy by adding more vegetables and brown bread! Dash of butter to toast it makes it even tastier
Ingredients:
Mixed vegetable – 1.5 cup (capsicum, carrot)
Onion – 2 tablespoons
Garlic – 2 cloves. Chopped finely
Rosemary leaves – few (optional)
Salt to taste
Red chili flakes – 1 tablespoon (adjust to your spice level)
Oregano – 1 teaspoon
Mixed Italian spices – 1 teaspoon
Olive oil – 2 teaspoon
Bread – 8
Butter – 1/2 teaspoon per sandwich
Pineapple – 1 tablespoon (optional)
Method:
Heat olive oil. Add Onion, Garlic and rosemary leaves. Fry till brown in color. Add Mixed vegetables
Add all the spices & salt mix well cook for another 4-5 mins. Add pineapple cook for another min
Switch it off. Grease toaster with butter.
Place one bread. Stuff it with vegetables. Close it with another bread
