I had some left over jackfruits and my kids were home during school holidays so I wanted to try something for their evening snack. I have decided to make cutlet with it. Because of the texture I was pretty sure it would turn out good . After I made I was looking in the net and I saw few recipe too.. I have added beans and carrot to enhance the nutritional values. You can just go with Potato and Jackfruit
Ingredients
Potato – 1 (large)
Onion – 1 (medium sliced thinly)
Green chillies – 2
Oil – 4 teaspoon
Finely chopped Mixed vegetables – 1/2 (Beans, carrot)
Red chilli powder- 1/2 teaspoon
Turmeric powder – 1/4 teaspoon
Garam masala – 1/2 teaspoon
Salt to taste
Roasted cumin seeds powder – 1/4 teaspoon
Finely chopped coriander leaves – 2 tablespoon
Oil for shallow frying
All purpose flour – 1 tablespoon
Corn flour – 2 tablespoon
Bread crumbs – 1/2 cup + 2 tablespoons
Method:
Remove the outer skin of Jackfruit. Cook Potato and jackfruit seeds with salt.
Drain extra water from cooked Potato and Jackfruit seeds. Peel skin from Potato and mash it
Heat 2 teaspoon of oil. Add Onion and fry till transparent. Add ginger garlic paste and Green chillies. Fry till nice aroma released. Let it cool down and grind to little coarse paste
Cook the vegetable with bit of salt. Heat 2 teaspoon of oil in a pan. Add Grinded paste and cooked vegetables
Mix mashed vegetable, jackfruit seeds paste, Add Coriander powder, Red chilli powder, garam masala, cumin seeds powder, turmeric powder. Mix well. Add grinded onion paste. Fry till the mixture is thick
Add 1/2 cup of bread crumbs and mix well. Switch it off
Take the mixture and shape it into desired shape. Arrange it in plate. Mix All purpose flour, corn flour and salt. Add water and make a smooth paste. Dip the shaped vegetable mixture.
Roll it in bread crumbs. Repeat the process
Heat flat pan. Add 1 teaspoon of oil. Arrange the cutlet in it. Let it cook till nice brown color in slow flame. Turn it over and add another 1 teaspoon of oil. And cook it again. Make sure all the sides are cooked
Serve hot with preferred sauce or chutney
