My Husband and 2nd son are found of Indian sweet esp Jalebi and Jangri. When we visit Indian Restaurant it is a must for my son. He loves both. I wanted to try both for this Diwali however I was big hesitant as not sure whether I can get the shape.. Then I saw numerous video and came to conclusion shape doesn’t really matter taste that matter more. So I have decided to try it out. They loved the texture and taste. You can try this with Ziplock bag or bottle.. I prefer to use the sauce bottle in my opinion it is mess free
Ingredients:
All purpose flour / Maida – 1 cup
Cornflour – 2 tablespoon
baking soda – 1/4 teaspoon
Curd / yogurt – 3/4 cup
Ghee – 2 tablespoon
Food color a pinch
Oil for deep frying
For Sugar syrup
Sugar – 1 and 1/2 cup
Water – 1 and 1/2 cup
Cardamom powder – 1/4 teaspoon
Saffron – Few strands (crushed)
Rose syrup – 1/2 teaspoon
Lemon juice – 1/2 teaspoon (to prevent crystal)
Method:
Add dry ingredients and mix it well.
Add water little by little to make a pancake like batter. It should be thick. Leave it aside for 24 hours to ferment it. Once Fermented mix well in stir and cut motion.
To make the sugar syrup, boil the sugar with water till it reaches 1 string consistency. Add Rose water, saffron and cardamom powder. Turn off the heat and keep aside.
Pour the batter in the Sauce bottle and cover it.
Heat the oil in broader pan. When you see bubbles in the pan oil is ready for frying. Oil shouldn’t be too hot. Now squeeze batter in the oil in circular motion (make small circle) about 3 circle per jalebi. Don’t worry if don’t get the shape.. Fry the jalebi on medium heat until golden brown in colour and crisp.
Once the jalebi is crisp and golden browned, drain the exess oil out and immediately dip the jalebi’s into the hot sugar syrup. Leave it the Jalebi in sugar syrup for a min and remove it and arrange it in serving plate
You can serve it with ice cream or Rabadi. Enjoy

True Parul, Couple of them become brown also my kids wanted to experiment brown brown one so I made couple of them darker but they liked the normal one
