Kadai vegetable is one of the dishes I order in Indian restaurants if I go out with my colleagues. I always think this is safer option for non Indians. Some people like Paneer butter masala but some of them didn’t prefer the paneer .. So for them Kadai vegetable is safer. I rarely do Kadai vegetable at home. The other day when I wanted to do some side dish I had few vegetables left over in the fridge but none of them is enough by itself. So decided to do some mixed vegetable gravy. Kids loved the addition of mushroom but it is completely optional. I have followed the recipe of my Kadai Paneer
Ingredients
Tomatoes – 3
Fresh Cream – 2 tablespoon or Cashew Nuts – 10 -12 (Fried till it is brown. I normally use baked one or dry roasted one. Optional for garnishing) I have used Fresh cream in this recipe
Green Chillies – 2-4 (adjust to your spice level) I have used only 2
Dry methi leaves – 2 teaspoon (soak it in hot water for 15 mins)
Heat kada and add 2 teaspoon oil in a kada. Add Onion, Tomatoes, Garlic and ginger and fry till it is mushy. ( I have added onion to it you can omit onion here and add when you make the gravy). Add slit green chillies to it. Fry for another 30 sec to a min. Switch it off and let it cool down. When it is cool down grind to coarse paste and keep it aside. Heat 1 teaspoon of oil in the kada and fry the paneer cubes till it sides are slight brown. Keep it aside
Add vegetables. Mix well. Close it with the lid and let the vegetable cook. Add Methi leaves and cream. Let it cook for another 3 mins
Add Paneer and mix well. And let it cook for another 2 mins. Switch off the flame and garnish with coriander leaves
