Kalkandu (Sugar Candy) Pongal

I never tried Kalkandu pongal. After seeing so delicious looking photos in many blogs I have decided to try it out. It came out extremely well. This is good alternative to Sakarai / sweet pongal which is using Jaggery

Ingredients
Raw Rice – 2 Cups
Moong dal – 4 Tablespoon
Kalkandu (sugar candy) – 1 cup
Milk – 3 Cup
Water – 6 cups
Ghee – 2 tablespoon
Cardamom Powder – a pinch
Raisins – 1 teaspoon
Cashewnuts (broken into 2) – 1 tablespoon
Method:

1. Using blender or mixer powder the kalkandu (sugar candy). Heat 1/2 tablespoon of ghee in small kada and fry the cashewnut and raisins till the nuts are in golden color.

2. Head a kada and Dry roast moong dal for few mins until nice aroma comes.Wash the rice and drain the water. Add rice and fried moong dhal in a pressure cooker. Add half of the milk and water to it (add a small plate also so that the milk doesn’t comes out). Pressure cook this till 4-5 whistle in low or medium flame. Switch it off. 

3.Once cool down open the cooker lid, Put that back on the low flame. Add powdered sugar candy, remaining milk. Cook till the sugar candy combines well (for about 5-7 mins)

4.Mash it well with a laddle till the rice is fully mashed up. Add ghee, cardamom powder, fried cashews and raisins. Mix well and cook for another 5 mins. Switch it off. Serve hot with some ghee on the top.
